Perfect Pesto Pizza

This plant powered pesto perfection pizza is well, perfection. And also, very difficult to say once, let alone five times in a row fast! I found this little gem of a product; Roza's Gourmet Diary Free Pesto and have been using it on almost everything! It makes a fabulous pasta sauce, great topping for hummus, spread for crackers with plant based cheese and of course, as the base for pizza!



For me a great pesto pizza must have the essential flavours of tomato and mozzarella or else it just isn't the same. Luckily, our local grocery store stocks some shredded plant based mozzarella and tomatoes are in season right now too. But to give this pizza a bit more pizazz I added pine nuts and kale! Yes kale! It wouldn't been a vegan blog without a kale recipe for one, and two my blog is named after kale so I couldn't really leave it off now could I?


If you are a little apprehensive about adding kale to your pizza, please don't worry. Just trust me, I'm not even a professional . . .

When you chop it into small bite size pieces and squeeze the crap out of it before you add it to the pizza you won't even believe you are eating kale. Plus we're gonna add pesto and cheese which makes everything better.


Plant powered pesto pizza


INGREDIENTS

1 pizza base (I'm using a home made one)

Plant based pesto - Roza's gourmet dairy free pesto or alternative

Red onion sliced into 1/2 rounds

Kale - cut up into bite sized pieces

sliced tomatoes

Plant based mozzarella cheese

Pine nuts - about a hand full


INSTRUCTIONS

Preheat oven to 200 degrees Celsius and warm pizza stone. Put the base on the warmed pizza stone then add the toppings starting with the pesto and ending with the pine nuts. Go crazy and add as much or as little as you want, you're the one who will be eating it after all.
